July 2008 Newsletter
The last month has once again been a hectic one, but most of our earthworks and plantings have been completed.
 
The arrival of our first shipment of eels has been most interesting and keeping these fish in the hatchery tanks has enabled us to observe their antics which are more pronounced when water is running in the tanks.They have become so quite that Pete and I believe that they can train them into performing eels in the future, but unfortunately this may never happen as our new smoke oven has just arrived and smoked eel is definitely on the menu!
 
The Jade Perch are still on the bite but Barra and other species are quiet in these cooler months, which will probably last a few more weeks but after that it will be Action Jackson in the fishing department as the spring livens up the ponds and Pete has erected all the shade houses for the anglers in the warmer months.
 
Speaking of shade, Ramzi has sourced a number of shade sails and these will be a great asset during the summer spread around the centre
 
I have been busy with the small smoke oven producing smoked Barra and Jades,also Redclaw smoked is a unique flavour while his chicken Pastrami goes down a treat. All of these products are now available at the Smokehouse Cafe. I'm very excited of late with the bush tucker in the area, discovering Lemon Aspen growing in the wild and quite a few lucky diners at the Smokehouse Cafe have tried this tasty little fruit with their meals.
 
At the Smokehouse Cafe,Yuwadee has produced a number of excellent dishes and it wont be long before she introduces them in the menu, meanwhile we have the pleasure of being her official taste testers.
 
Pete...our fearless leader...says we may have the opportunity to do a little research on saltwater crocs and our current license allows us to keep two at the centre this would be an exciting adventure and is definitely in the pipeline.
